Ingredient Substitution

Baking powder (1 teaspoon) 1/2 teaspoon cream of tartar

plus 1/4 teaspoon baking soda


1 cup self-raising flour 1 cup all purpose flour plus 1 teaspoon

baking powder, 1/2 teaspoon salt and

1/4 teaspoon baking soda


1 cup buttermilk 1 tablespoon lemon juice or vinegar

added to 1 cup of milk. Stir to mix and let

it stand for 5 to 10 minutes before using


1 square = 1 ounce (28g) 3 tablespoons unsweetened cocoa powder

unsweetened chocolate plus 1 tablespoon shortening or cooking oil



4 ounces sweet chocolate 1/4 cup unsweetened cocoa powder plus

1/3 cup sugar and 3 tablespoons of

shortening
